Description

Savor the rich flavors of tender chicken breasts filled with gooey mozzarella and fresh herbs, all wrapped in a crispy crust. Perfect for any occasion!

Ingredients

Scale
  • 4 medium boneless, skinless chicken breasts
  • 8 oz fresh mozzarella cheese
  • 1/4 cup fresh basil, chopped (or 1 tbsp dried basil)
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.
  2. Prepare the Chicken: Carefully slice each chicken breast horizontally to create pockets. Season both sides generously with salt and pepper.
  3. Stuffing Time: Fill each pocket with mozzarella cheese and chopped basil until generously packed.
  4. Sear the Chicken: Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  5. Bake It: Place the seared chicken in the prepared baking dish. Bake for 25-30 minutes or until the internal temperature reaches at least 165°F (75°C).
  6. Serve It Up: Allow the chicken to rest for a few minutes before slicing open to reveal the melted mozzarella. Serve with your favorite sides.
