Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.
- Prepare the Chicken: Carefully slice each chicken breast horizontally to create pockets. Season both sides generously with salt and pepper.
- Stuffing Time: Fill each pocket with mozzarella cheese and chopped basil until generously packed.
- Sear the Chicken: Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Bake It: Place the seared chicken in the prepared baking dish. Bake for 25-30 minutes or until the internal temperature reaches at least 165°F (75°C).
- Serve It Up: Allow the chicken to rest for a few minutes before slicing open to reveal the melted mozzarella. Serve with your favorite sides.
