- 1 cup panko breadcrumbs

- 2 tbsp honey
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with panko breadcrumbs mixed with paprika.
- Cut salmon fillets into bite-sized pieces.
- Dip each piece in flour, shaking off excess, then in egg wash, and finally coat with panko breadcrumbs.
- Place coated salmon bites on the prepared baking sheet and spray lightly with cooking spray.
- Bake for 12-15 minutes or until golden brown and cooked through.
- In a small bowl, mix Sriracha sauce, mayonnaise, and honey until smooth and creamy.
- Adjust seasoning to taste.
