- 1 medium onion, diced
- 1 can (4 oz) diced green chiles
- 8 oz cream cheese
- 4 cups low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 2 tbsp olive oil
Instructions
- Gather all ingredients. Dice the onions and mince the garlic while ensuring the chicken breasts are thawed.
- In a large pot over medium heat, add olive oil. Once hot, add diced onions and minced garlic. Sauté until soft and fragrant, about 3-5 minutes.
- Place the boneless chicken breasts into the pot. Season with cumin and chili powder. Pour in enough chicken broth to cover everything well.
- Bring to a gentle boil then reduce to a simmer. Cook for about 20-25 minutes until the chicken is cooked through and tender.
- Remove the chicken from the pot and shred using two forks. Return shredded chicken back into the pot along with drained beans and green chiles.
