Description

Savor the fresh and vibrant combination of grilled chicken, creamy avocado, and mozzarella in this easy-to-make Chicken Avocado Caprese, perfect for any occasion.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 8 oz fresh mozzarella balls
  • 2 ripe avocados
  • 1 cup cherry tomatoes
  • 1 cup fresh basil leaves
  • 4 tbsp balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Preheat your grill or stovetop grill pan over medium-high heat. Season chicken breasts generously with salt and pepper on both sides.
  2. Grill the Chicken: Place seasoned chicken on the grill and cook for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F/74°C). Remove from heat and let rest for a few minutes before slicing.
  3. Assemble Ingredients: While the chicken rests, slice avocados in half and remove pits. Halve cherry tomatoes and tear basil leaves into smaller pieces.
  4. Layer It Up: On a serving platter, layer sliced grilled chicken, followed by mozzarella balls, avocado slices, and halved cherry tomatoes.
  5. Drizzle with Balsamic Glaze: Just before serving, drizzle balsamic glaze over the layered ingredients for added flavor.
  6. Serve and Enjoy: Transfer to individual plates if not already done. Garnish with extra basil leaves if desired. Serve immediately while everything is fresh.
