- 2 cups butternut squash (peeled and diced)
- 4 oz creamy goat cheese (crumbled)
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface until about an eighth of an inch thick. Transfer it to a tart pan or lined baking sheet.
- In a bowl, toss the diced butternut squash with olive oil, salt, pepper, and fresh thyme until well coated.
- Spread the seasoned squash evenly on the prepared baking sheet and roast for about 25 minutes or until tender and caramelized.
- Once roasted, allow the squash to cool slightly. Spread it evenly over the puff pastry base, then crumble goat cheese generously over the top.
- Return the assembled tart to the oven and bake for an additional 20-25 minutes until golden brown.
