Description

  • 2 cups butternut squash (peeled and diced)
  • 4 oz creamy goat cheese (crumbled)
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface until about an eighth of an inch thick. Transfer it to a tart pan or lined baking sheet.
  3. In a bowl, toss the diced butternut squash with olive oil, salt, pepper, and fresh thyme until well coated.
  4. Spread the seasoned squash evenly on the prepared baking sheet and roast for about 25 minutes or until tender and caramelized.
  5. Once roasted, allow the squash to cool slightly. Spread it evenly over the puff pastry base, then crumble goat cheese generously over the top.
  6. Return the assembled tart to the oven and bake for an additional 20-25 minutes until golden brown.
