Instructions
- Slice the pork tenderloin into medallions about 1 inch thick.
- Heat olive oil in a large skillet over medium-high heat.
- Sear each side of the medallions for about 3 minutes until golden brown.
- Add chopped shallots to the skillet and sauté for about 2 minutes until translucent.
- Pour in apple cider and chicken broth; stir in brown sugar and thyme. Let it bubble for about 3 minutes.
- Return pork medallions to the skillet and simmer for an additional 5 minutes or until cooked through.
