Instructions

  1. Slice the pork tenderloin into medallions about 1 inch thick.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear each side of the medallions for about 3 minutes until golden brown.
  4. Add chopped shallots to the skillet and sauté for about 2 minutes until translucent.
  5. Pour in apple cider and chicken broth; stir in brown sugar and thyme. Let it bubble for about 3 minutes.
  6. Return pork medallions to the skillet and simmer for an additional 5 minutes or until cooked through.
