- 2 large sweet onions (such as Vidalia), thinly sliced
- 3 tbsp extra virgin olive oil
- 4 oz soft goat cheese, crumbled
- 1 tbsp balsamic vinegar
- 1 tsp fresh thyme leaves
Instructions
- Preheat your oven to 400°F (200°C). Place flatbreads on a baking sheet lined with parchment paper.
- In a large skillet over medium heat, add olive oil.
- Add sliced onions and cook slowly for about 10-15 minutes, stirring occasionally until they are golden brown and tender.
- Once caramelized, stir in balsamic vinegar and fresh thyme, allowing them to simmer together for a couple of minutes.
- Spread crumbled goat cheese evenly over each flatbread.
- Top generously with the caramelized onion mixture.
- Bake in the preheated oven for about 10 minutes or until edges are crispy and golden.
