  • 1 cup Fresh Breadcrumbs
  • 1 cup All-Purpose Flour
  • 1/2 cup Suet or Butter (melted)
  • 3/4 cup Dark Brown Sugar
  • 2 large Eggs
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Salt

Instructions

  1. Gather all ingredients to ensure a smooth cooking process.
  2. Chop mixed dried fruits into bite-sized pieces.
  3. In a large bowl, combine breadcrumbs, flour, dark brown sugar, cinnamon, nutmeg, and salt. Stir until evenly mixed.
  4. Create a well in the center of the dry mix and add melted suet or butter, eggs, and chopped dried fruits. Mix until combined into a thick batter.
  5. Transfer the mixture into a greased pudding basin or mold. Cover tightly with parchment paper and foil.
  6. Steam for about six hours on low heat or bake at 325°F (160°C) until firm.
  7. Once cooked through, allow it to cool completely before storing in the fridge until serving day.
  8. On serving day, steam briefly again before unmolding onto a serving platter.
