Instructions
- Melt the Chocolate: Place the chopped dark chocolate and unsalted butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between until melted and smooth.
- Mix Sugar and Eggs: In a separate bowl, whisk together granulated sugar and eggs until light and frothy.
- Combine Ingredients: Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously. Add vanilla extract and all-purpose flour; stir gently until just combined.
- Prepare Ramekins: Grease four ramekins with butter or cooking spray. Evenly distribute the batter among the ramekins, filling each about halfway.
- Add Water to Instant Pot: Pour 1 cup of water into the Instant Pot's inner pot. Place the steam rack inside and carefully position each filled ramekin on top.
- Pressure Cook: Seal the Instant Pot lid and set it to high pressure for 8 minutes. Let it naturally release for 2 minutes before manually releasing any remaining pressure.
- Serve: Carefully transfer the lava cakes to plates and flip them right-side up. Dust with powdered sugar or serve with ice cream for an extra touch.
