Warm up with this hearty pumpkin chili featuring ground turkey and beans—a perfect dish to cozy up with on chilly days.

- 1 lb ground turkey
- 1 can (15 oz) canned pumpkin purée
- 1 can (15 oz) kidney beans, rinsed
- 1 can (15 oz) black beans, rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, chopped (red or green)
- 2 tbsp chili powder
- 1 tsp cumin
- Salt & pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot over medium heat, add olive oil. Toss in the chopped onions and minced garlic. Cook until fragrant and golden brown, about five minutes.
- Add ground turkey to the pot. Break it apart with a wooden spoon while cooking until no longer pink, about seven minutes.
- Stir in the chopped bell peppers along with the canned pumpkin purée and diced tomatoes. Mix well.
- Sprinkle chili powder and cumin into the mixture, adding salt and pepper to taste. Let it simmer on low heat for ten minutes to allow flavors to meld.
- Gently fold in the rinsed kidney beans and black beans. Allow to simmer on low for another fifteen minutes until heated through.
- Ladle the hearty chili into bowls. Optionally, top with sour cream or fresh cilantro and serve with crunchy tortilla chips.
