Description

Warm up with this hearty pumpkin chili featuring ground turkey and beans—a perfect dish to cozy up with on chilly days.


Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) canned pumpkin purée
  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped (red or green)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Toss in the chopped onions and minced garlic. Cook until fragrant and golden brown, about five minutes.
  2. Add ground turkey to the pot. Break it apart with a wooden spoon while cooking until no longer pink, about seven minutes.
  3. Stir in the chopped bell peppers along with the canned pumpkin purée and diced tomatoes. Mix well.
  4. Sprinkle chili powder and cumin into the mixture, adding salt and pepper to taste. Let it simmer on low heat for ten minutes to allow flavors to meld.
  5. Gently fold in the rinsed kidney beans and black beans. Allow to simmer on low for another fifteen minutes until heated through.
  6. Ladle the hearty chili into bowls. Optionally, top with sour cream or fresh cilantro and serve with crunchy tortilla chips.
