Description

Enjoy a delightful blend of sweet butternut squash and savory sausage in this easy-to-make skillet dish, perfect for cozy weeknight dinners.

Ingredients

Scale
  • 1 medium butternut squash, peeled and cubed
  • 1 lb Italian chicken sausage or turkey sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat. Add olive oil and let it warm until shimmering.
  2. Add the sausage to the hot skillet. Cook until browned and crispy on all sides (about 5-7 minutes), breaking it into pieces as it cooks. Remove from skillet and set aside.
  3. In the same skillet with drippings, add diced onions. Sauté until translucent (about 5 minutes). Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in cubed butternut squash, season with salt and pepper, cover, and let cook for about 10-15 minutes until tender.
  5. Return the cooked sausage back into the skillet with the sautéed vegetables. Stir everything together over low heat to meld flavors.
  6. Transfer to plates or serve directly from the skillet. Garnish with fresh herbs if desired.
