Instructions
- Heat a large skillet over medium heat. Add olive oil and let it warm until shimmering.
- Add the sausage to the hot skillet. Cook until browned and crispy on all sides (about 5-7 minutes), breaking it into pieces as it cooks. Remove from skillet and set aside.
- In the same skillet with drippings, add diced onions. Sauté until translucent (about 5 minutes). Add minced garlic and cook for an additional minute until fragrant.
- Stir in cubed butternut squash, season with salt and pepper, cover, and let cook for about 10-15 minutes until tender.
- Return the cooked sausage back into the skillet with the sautéed vegetables. Stir everything together over low heat to meld flavors.
