  • 34 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • Salt and pepper to taste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, combine yogurt, minced garlic, grated ginger, cumin, coriander, turmeric, salt, and pepper.
  2. Add chicken pieces and ensure they are well coated. Cover and refrigerate for at least one hour or overnight.
  3. Heat oil in a large skillet over medium heat. Sauté chopped onions until translucent (about 5 minutes).
  4. Remove chicken from marinade (discard leftover marinade) and add to the skillet with onions. Cook until browned on all sides (approximately 8 minutes).
  5. Pour in crushed tomatoes and coconut milk. Stir well and let simmer uncovered for about 20 minutes until thickened.
  6. Garnish with fresh cilantro before serving.
