- 3–4 boneless, skinless chicken breasts
- 1 cup plain yogurt
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- Salt and pepper to taste
- 1 can (14 oz) crushed tomatoes
- 1 cup coconut milk
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine yogurt, minced garlic, grated ginger, cumin, coriander, turmeric, salt, and pepper.
- Add chicken pieces and ensure they are well coated. Cover and refrigerate for at least one hour or overnight.
- Heat oil in a large skillet over medium heat. Sauté chopped onions until translucent (about 5 minutes).
- Remove chicken from marinade (discard leftover marinade) and add to the skillet with onions. Cook until browned on all sides (approximately 8 minutes).
- Pour in crushed tomatoes and coconut milk. Stir well and let simmer uncovered for about 20 minutes until thickened.
- Garnish with fresh cilantro before serving.
