Description

  • 4 large bell peppers (any color)
  • 1 lb ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 tsp paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly coat a baking dish with cooking spray.
  2. Slice the tops off each bell pepper and remove seeds. Place them upright in the prepared baking dish.
  3. In a large skillet over medium heat, add 2 tbsp olive oil. Sauté chopped onions and minced garlic until fragrant (about 2 minutes).
  4. Add ground chicken to the skillet, breaking it apart with a spatula until fully cooked through (about 5-7 minutes).
  5. Stir in tomato sauce and seasonings; cook for an additional 5 minutes until well combined.
  6. Generously fill each bell pepper with the chicken mixture, pressing down gently.
  7. Cover the baking dish with foil and bake for about 25-30 minutes.
  8. Remove foil, sprinkle shredded cheese on top of each pepper, and bake uncovered for an additional 10 minutes until cheese is bubbly and golden.
