- 1 lb ground chicken
- 1 medium onion, chopped

- 1 cup shredded mozzarella cheese
- 1 tsp salt

- 1 tsp dried oregano
- 1/2 tsp paprika
Instructions
- Preheat your oven to 375°F (190°C). Lightly coat a baking dish with cooking spray.
- Slice the tops off each bell pepper and remove seeds. Place them upright in the prepared baking dish.
- In a large skillet over medium heat, add 2 tbsp olive oil. Sauté chopped onions and minced garlic until fragrant (about 2 minutes).
- Add ground chicken to the skillet, breaking it apart with a spatula until fully cooked through (about 5-7 minutes).
- Stir in tomato sauce and seasonings; cook for an additional 5 minutes until well combined.
- Generously fill each bell pepper with the chicken mixture, pressing down gently.
- Cover the baking dish with foil and bake for about 25-30 minutes.
- Remove foil, sprinkle shredded cheese on top of each pepper, and bake uncovered for an additional 10 minutes until cheese is bubbly and golden.
