Description

A vibrant, savory dish that combines fluffy quinoa with fresh herbs and colorful vegetables, perfect for holiday gatherings or a cozy weeknight dinner.

Ingredients

Scale
  • 1 cup quinoa
  • 2 cups low-sodium vegetable broth
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp fresh thyme, chopped

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; sauté until golden brown and fragrant, about 3 minutes.
  2. Mix in Vegetables: Stir in diced carrots (and any additional veggies). Cook until tender, approximately 5 minutes.
  3. Toast the Quinoa: Add rinsed quinoa to the skillet. Stir for about 2 minutes until slightly toasted to enhance its nuttiness.
  4. Add Broth and Simmer: Pour in vegetable broth along with fresh herbs (parsley and thyme). Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes or until quinoa absorbs all the broth.
  5. Fluff It Up: Remove from heat and let it sit covered for an additional 5 minutes. Fluff quinoa gently with a fork before serving.
  6. Serve and Enjoy: Transfer to serving plates or bowls, garnishing with extra fresh herbs if desired. This pilaf pairs well with roasted vegetables or can be enjoyed on its own.
