- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup extra virgin olive oil
- 1 tsp dried oregano
- 2 bell peppers (red, yellow, or orange), sliced
- 1 zucchini, sliced into half-moons
- 1 red onion, chopped
- 1/2 cup mixed olives (green and black), pitted
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine olive oil, lemon juice, minced garlic, and oregano to create the marinade. Whisk until well mixed.
- Place chicken breasts in a large zip-top bag or bowl and pour the marinade over them. Let marinate for at least 30 minutes.
- While the chicken marinates, prepare your veggies by slicing the bell peppers and zucchini and chopping the red onion into uniform pieces.
- In a large baking dish, arrange the marinated chicken breasts and surround them with the sliced veggies and olives.
- Bake in the preheated oven for about 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
- Serve immediately, drizzling any remaining marinade over the dish for added flavor.
