Description

Mediterranean Lemon-Olive Chicken & Veggies is a colorful, zesty dish that combines marinated chicken with fresh vegetables for a healthy and satisfying meal.

  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 tsp dried oregano
  • 2 bell peppers (red, yellow, or orange), sliced
  • 1 zucchini, sliced into half-moons
  • 1 red onion, chopped
  • 1/2 cup mixed olives (green and black), pitted

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine olive oil, lemon juice, minced garlic, and oregano to create the marinade. Whisk until well mixed.
  3. Place chicken breasts in a large zip-top bag or bowl and pour the marinade over them. Let marinate for at least 30 minutes.
  4. While the chicken marinates, prepare your veggies by slicing the bell peppers and zucchini and chopping the red onion into uniform pieces.
  5. In a large baking dish, arrange the marinated chicken breasts and surround them with the sliced veggies and olives.
  6. Bake in the preheated oven for about 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
  7. Serve immediately, drizzling any remaining marinade over the dish for added flavor.
