Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about three minutes with an electric mixer.
- Beat in the eggs one at a time along with the vanilla extract until well combined. Scrape down the sides of the bowl as needed.
- Add green food coloring to achieve your desired shade of green.
- Gradually add the dry ingredients to the wet mixture until no flour streaks remain; the dough will be thick and sticky.
- Use a tablespoon or cookie scoop to drop balls of dough onto prepared baking sheets, spacing them about two inches apart. If desired, sprinkle sugar sprinkles on top.
- Bake for approximately 10 minutes or until lightly golden around the edges but still soft in the center. Allow cooling before serving.
