Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • Green food coloring (as desired)
  • Sugar sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about three minutes with an electric mixer.
  4. Beat in the eggs one at a time along with the vanilla extract until well combined. Scrape down the sides of the bowl as needed.
  5. Add green food coloring to achieve your desired shade of green.
  6. Gradually add the dry ingredients to the wet mixture until no flour streaks remain; the dough will be thick and sticky.
  7. Use a tablespoon or cookie scoop to drop balls of dough onto prepared baking sheets, spacing them about two inches apart. If desired, sprinkle sugar sprinkles on top.
