- 1 cup bell peppers, sliced
- 1 cup carrots, shredded
- 1 cup cucumber, sliced
- 4 large flour tortillas or lettuce leaves
- 1/2 cup smooth peanut butter
- 3 tbsp low-sodium soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- Water (to adjust consistency)
Instructions
- In a bowl, marinate chicken breasts with soy sauce and garlic powder for at least 15 minutes.
- Heat a skillet over medium heat and add a splash of oil. Cook marinated chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F (74°C). Remove from heat and let cool before slicing.
- In a separate bowl, whisk together peanut butter, honey, rice vinegar, and enough water until you achieve a smooth, pourable consistency.
