Instructions
- 1. Prep Your Ingredients: Rinse the zucchini under cold water. Trim the ends and slice them into thin rounds, about half an inch thick.
- 2. Toast the Pine Nuts: In a dry skillet over medium heat, add the pine nuts. Stir constantly until golden brown and fragrant, about 3-5 minutes. Remove from pan and set aside.
- 3. Heat Olive Oil: In the same skillet, pour in two tablespoons of olive oil and let it warm over medium heat.
- 4. Add Zucchini Slices: Once the oil is shimmering, add the sliced zucchini to the pan. Season generously with salt and pepper. Sauté for about 5-7 minutes until tender but slightly firm.
- 5. Mix in Fresh Herbs: Just before serving, add the chopped mint and basil to the skillet. Toss gently to combine.
- 6. Finish with Toasted Pine Nuts: Remove from heat and fold in the toasted pine nuts for added crunch.
