Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

- In a separate mixing bowl, cream the melted butter (or coconut oil) with brown sugar until light and fluffy.
- Add the egg to the creamed mixture and beat well until fully combined.

- Drop tablespoons of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
