- 1 can (15 oz) chickpeas, drained and rinsed
- 2 medium carrots, chopped
- 2 medium potatoes (Yukon Gold or russet), diced
- 2 stalks celery, chopped
- 2 cups fresh spinach
- 4 cups vegetable broth
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Chop all vegetables into bite-sized pieces.
- Heat olive oil in a large pot over medium heat. Add diced onions (if using) and minced garlic; cook until fragrant and translucent.
- Stir in chopped carrots, celery, and potatoes. Sauté for about five minutes until they begin to soften.
- Add vegetable broth to cover the veggies completely. Bring to a gentle boil and stir in dried herbs. Reduce heat and let it simmer for about 20 minutes.
- Once simmering, add chickpeas to the pot. Continue cooking until all ingredients are tender.
- Stir in fresh spinach during the last few minutes of cooking until wilted. Season with salt and pepper to taste.
