- 4 cups fresh spinach
- 1 green bell pepper, finely chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 6 large eggs
- 1 teaspoon cumin powder
- Crushed red pepper flakes to taste
- ½ cup crumbled feta cheese (divided)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add chopped onion and green bell pepper; sauté for about 5 minutes until softened.
- Stir in minced garlic and fresh spinach. Cook until spinach is wilted, about 2 minutes. Add cumin powder and crushed red pepper flakes; mix well.
- In a bowl, whisk together the eggs with half of the crumbled feta cheese and season with salt and pepper.
- Grease a muffin tin with olive oil or nonstick spray. Spoon equal amounts of the vegetable mixture into each muffin cup.
- Pour in the egg mixture until just full.
- Bake for 18-20 minutes or until eggs are set but still slightly jiggly. Let cool before removing from the tin.
- Serve warm, topped with remaining feta cheese.
