Ingredients

  • 4 cups fresh spinach
  • 1 green bell pepper, finely chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 6 large eggs
  • 1 teaspoon cumin powder
  • Crushed red pepper flakes to taste
  • ½ cup crumbled feta cheese (divided)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and green bell pepper; sauté for about 5 minutes until softened.
  3. Stir in minced garlic and fresh spinach. Cook until spinach is wilted, about 2 minutes. Add cumin powder and crushed red pepper flakes; mix well.
  4. In a bowl, whisk together the eggs with half of the crumbled feta cheese and season with salt and pepper.
  5. Grease a muffin tin with olive oil or nonstick spray. Spoon equal amounts of the vegetable mixture into each muffin cup.
  6. Pour in the egg mixture until just full.
  7. Bake for 18-20 minutes or until eggs are set but still slightly jiggly. Let cool before removing from the tin.
  8. Serve warm, topped with remaining feta cheese.
