- 4 cups Mixed Greens (arugula, spinach, kale)
- 1 cup Cherry Tomatoes (halved)
- 1 medium Cucumber (sliced)
- 2 tbsp Olive Oil (for frying)

- 2 tbsp Fresh Lemon Juice

Instructions
- Prepare the Halloumi: Preheat a nonstick skillet over medium-high heat. Cut the halloumi into thick slices or tear into irregular pieces. Add 2 tbsp of olive oil to the skillet. Once hot, add the halloumi pieces. Cook for about 3 minutes until golden brown; flip and cook for another 3 minutes until crispy.
- Assemble the Salad: In a large bowl, combine mixed greens, sliced cucumber, and halved cherry tomatoes.
- Make the Dressing: In a small bowl, whisk together 2 tbsp of olive oil and fresh lemon juice. Season with salt and pepper to taste.
- Combine: Drizzle the dressing over the salad mixture and toss gently. Once the halloumi is cooked, remove from heat and let it cool slightly before tearing it into bite-sized pieces. Scatter on top of the salad just before serving.
- Serve: Plate your salad, ensuring each serving has a generous amount of crispy halloumi.
