Description

Butternut Squash Fritters with Yogurt Dip are a deliciously crispy snack that brings together the warm flavors of fall and a refreshing yogurt dip perfect for any gathering.

Ingredients

Scale
  • 2 cups peeled and grated butternut squash
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup chopped green onions
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp dill (fresh or dried)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel and grate the butternut squash. Use a clean kitchen towel to squeeze out excess moisture.
  3. In a large mixing bowl, combine the grated squash, flour, eggs, green onions, cumin, salt, and pepper. Mix until well combined.
  4. Form small patties (about three inches wide) from the mixture and place them on the prepared baking sheet.
  5. Bake for about 15 minutes or until golden brown, flipping halfway through for even cooking.
  6. In a small bowl, mix together Greek yogurt, lemon juice, dill, salt, and pepper until smooth.
  7. Serve warm fritters alongside the creamy yogurt dip.
