  • 23 medium sweet potatoes, cubed
  • 1 can (13.5 oz) full-fat coconut milk
  • 1-inch piece fresh ginger, grated
  • 1 tsp turmeric powder
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Peel and cube the sweet potatoes. Finely chop the onion, mince the garlic, and grate the ginger.
  2. In a large pot over medium heat, add a splash of coconut oil. Sauté the onion until translucent (about 5 minutes). Add garlic and ginger; cook until fragrant (approximately 2 minutes).
  3. Stir in sweet potato cubes and turmeric powder until well coated.
  4. Add vegetable broth to cover sweet potatoes. Bring to a boil, then reduce heat to simmer for about 20 minutes or until sweet potatoes are tender.
  5. Use an immersion blender or transfer to a countertop blender to blend the soup until smooth. If desired, stir in coconut milk for added creaminess.
  6. Mix in lemon juice before serving. Adjust seasoning as necessary.
