- 2–3 medium sweet potatoes, cubed
- 1 can (13.5 oz) full-fat coconut milk
- 1-inch piece fresh ginger, grated
- 1 tsp turmeric powder
- 4 cups low-sodium vegetable broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp freshly squeezed lemon juice
Instructions
- Peel and cube the sweet potatoes. Finely chop the onion, mince the garlic, and grate the ginger.
- In a large pot over medium heat, add a splash of coconut oil. Sauté the onion until translucent (about 5 minutes). Add garlic and ginger; cook until fragrant (approximately 2 minutes).
- Stir in sweet potato cubes and turmeric powder until well coated.
- Add vegetable broth to cover sweet potatoes. Bring to a boil, then reduce heat to simmer for about 20 minutes or until sweet potatoes are tender.
- Use an immersion blender or transfer to a countertop blender to blend the soup until smooth. If desired, stir in coconut milk for added creaminess.
- Mix in lemon juice before serving. Adjust seasoning as necessary.
