Ingredients
- Udon Noodles: 200g (fresh or frozen)
- Fresh Ginger: 1 tbsp, finely grated
- Miso Paste: 2 tbsp (white or yellow)

- Soy Sauce: 2 tbsp (low-sodium)
- Green Onions: 2, chopped
- Tofu: 100g, cubed (optional)
Instructions
- Prepare the Broth: In a medium saucepan, heat the vegetable broth over medium heat. Add soy sauce and grated ginger. Simmer gently while preparing the noodles.
- Cook the Udon Noodles: In another pot, bring water to a boil. Cook the udon noodles according to package instructions (approximately 8 minutes). Drain and set aside.
- Mix in Miso: After simmering the broth for about 10 minutes, mix miso paste with a ladleful of hot broth until smooth. Stir this mixture back into the pot.
- Add Vegetables and Tofu: If using tofu, add it now along with any additional vegetables like bok choy or mushrooms. Let everything simmer together for another 5 minutes.
- Assemble Your Bowl: Divide cooked udon noodles among bowls and ladle the broth over them. Top with freshly chopped green onions.
- Serve Hot: Serve immediately while steaming hot and enjoy!
