  • Miso Paste: 2 tbsp (white or yellow)

  • Soy Sauce: 2 tbsp (low-sodium)
  • Green Onions: 2, chopped
  • Tofu: 100g, cubed (optional)

Instructions

  1. Prepare the Broth: In a medium saucepan, heat the vegetable broth over medium heat. Add soy sauce and grated ginger. Simmer gently while preparing the noodles.
  2. Cook the Udon Noodles: In another pot, bring water to a boil. Cook the udon noodles according to package instructions (approximately 8 minutes). Drain and set aside.
  3. Mix in Miso: After simmering the broth for about 10 minutes, mix miso paste with a ladleful of hot broth until smooth. Stir this mixture back into the pot.
  4. Add Vegetables and Tofu: If using tofu, add it now along with any additional vegetables like bok choy or mushrooms. Let everything simmer together for another 5 minutes.
