This vibrant dish combines spicy Cajun sausage with sweet butternut squash and crispy Brussels sprouts, creating a delightful meal that’s perfect for any night.

  • 1 lb Cajun sausage, sliced
  • 1 lb fresh Brussels sprouts, trimmed and halved
  • 4 cups butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tsp Cajun seasoning

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Wash and trim the Brussels sprouts by cutting off the ends and halving them. Peel and chop the butternut squash into bite-sized cubes.
  3. In a large bowl, combine Brussels sprouts and butternut squash. Drizzle with olive oil, then sprinkle with garlic powder and Cajun seasoning. Toss until evenly coated.
  4. Spread the sliced Cajun sausage over the vegetable mixture on the baking sheet.
  5. Place in the preheated oven and roast for about 25-30 minutes. Stir halfway through to ensure even cooking.
