  • 1 medium yellow onion, chopped
  • 1 cup enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 8 corn tortillas
  • 1/2 cup sour cream (for serving)
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced jalapeños (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly coat a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the ground beef until browned. Add chopped onions halfway through and sauté until translucent.
  3. Drain excess fat and stir in half of the enchilada sauce.
