- 1 lb ground beef (80/20)
- 1 medium yellow onion, chopped
- 1 cup enchilada sauce (store-bought or homemade)
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 8 corn tortillas
- 1/2 cup sour cream (for serving)
- 1/4 cup chopped cilantro
- 1/4 cup sliced jalapeños (optional)
Instructions
- Preheat your oven to 350°F (175°C) and lightly coat a baking dish with nonstick cooking spray.
- In a skillet over medium heat, cook the ground beef until browned. Add chopped onions halfway through and sauté until translucent.
- Drain excess fat and stir in half of the enchilada sauce.
- Take one tortilla, spoon some beef mixture down the center, sprinkle with cheese, roll it up tightly, and place seam-side down in your baking dish. Repeat until all fillings are used.
- Pour remaining enchilada sauce over assembled enchiladas. Top generously with more cheese.
- Bake in the preheated oven for 20-25 minutes until bubbly and golden brown. Let cool slightly before serving.
