  • 2 fresh skinless salmon fillets (6 oz each)
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 2 cups fresh spinach, packed
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp freshly squeezed lemon juice

Instructions

  1. Rinse the salmon fillets under cold water and pat dry. Season generously with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, place the salmon fillets in the pan, skin-side down. Cook for about 4-5 minutes until golden brown. Carefully flip and cook for another 4-5 minutes until cooked through and flaky. Remove from pan and set aside.
  3. In the same skillet, lower the heat slightly and add minced garlic. Sauté for about one minute until fragrant.
  4. Toss in fresh spinach and stir constantly until wilted, about two minutes.
  5. Pour in heavy cream and stir to combine. Add grated Parmesan cheese and lemon juice; mix until cheese melts into the sauce.
  6. Return salmon to the skillet, spooning creamy spinach sauce over each piece. Simmer for one minute to meld flavors. Plate and drizzle with any remaining sauce before serving.
