Instructions
- Cook the Gnocchi: Bring a large pot of salted water to a boil. Add gnocchi and cook according to package instructions until they float, about 2–3 minutes. Drain and set aside.
- Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, season shrimp with salt and pepper, then cook until pink and opaque, about 2 minutes per side. Remove from skillet and set aside.
- Make the Sauce: In the same skillet, add minced garlic and sauté for about a minute until fragrant. Pour in heavy cream, stirring until combined. Bring to a gentle simmer while scraping up any bits stuck to the pan.
- Add Spinach & Cheese: Stir in fresh spinach until wilted. Gradually add grated Parmesan cheese while stirring constantly until melted and creamy.
- Combine Everything: Return cooked shrimp to the skillet along with drained gnocchi. Toss gently in the sauce until well-coated and heated through.
- Serve & Enjoy: Transfer to plates, garnish with extra Parmesan if desired, and enjoy your creamy culinary delight!
